Observation (CORRECTED DURING INSPECTION): Found rice sitting in clean dish area cooling, 37 C staff not sure of how long it has been there.
Corrective Action(s): Discard rice.
Remind staff of proper cooling 60 - 20 C in 2 hours, then 20 - 4 C in 4 hours (in cooler)
Must use a probe thermometer to determine temperature not hand on the bowl.

Observation (CORRECTED DURING INSPECTION): Found noodles soaking in water at 19 C for more then 2 hours
Corrective Action(s): Must keep potentially hazardous foods (i.e. noodles that have been rehydrated) below 4 C at all times.

Observation (CORRECTED DURING INSPECTION): Found multiple items put away with food still on them ( hot pot pots, and strainers)
Corrective Action(s): Must ensure all equipment and dishes are put away properly washed and sanitized.
Rewash and sanitize items.

Observation (CORRECTED DURING INSPECTION): 1. Found dirty equipment on clean side of dishwasher as well as food bits.
2. Found inserts drying stacked, insides still had lots of water stuck inside
Corrective Action(s): 1. Must keep clean side of dishwasher clean, dirty dishes are to remain in the dirty side of the sink.
2. Must dry inserts completely before stacking and putting away. Wash less at a time if unable to dry properly or stagger the inserts so they drain.

Observation: Watched staff member rub nose then go to cut up food.
Corrective Action(s): Remind all staff of proper hand washing (i.e. after touching face, money, garbage, etc)
