Make sure meat is thawed either in the walk-in cooler or under cold running water, do not thaw on counter due to potential pathogen growth.
No other problems noted at the time of inspection, all refrigerators and freezers meet temperature requirements, manual dishwashing with 50 ppm chlorine, general sanitation satisfactory, no indications of insect or rodent infestation.
