Comments

-Record hot holding temperatures for the BBQ case on the temperature logs.

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
The chlorine sanitizer solution in the 3-compartment sinks and in the spray bottles had 100 ppm chlorine.
No evidence of pests.
A professional pest control company is onsite regularly, reports available for review.
A second heating element was installed in the BBQ hot holding case. It is now maintaining a temperature of 60 C.
General sanitation was satisfactory.
