Observation: A tray of hash brown stored in the upper compartment of Alto Sham unit measured with an internal temperature of 54C.
Corrective Action(s): Staff discarded the tray of hash browns and adjusted the temperature gauge. Ensure hot food is hot held above 60C or above.

Observation (CORRECTED DURING INSPECTION): 1. High temperature dishwasher dispensed around 68C at the plate level during the final rinse cycle. At least 71C is required to properly sanitize food contact surfaces
2. Surface disinfectant used in the kitchen for sanitizing food contact surfaces used to prepare raw chicken. Staff unable to provide information that this disinfectant is a no-rinse food sanitizer.
Corrective Action(s): 1. Set up manual dishwashing at the 3 compartment sink. Staff may use the dishwasher for washing and rinsing, but must manually sanitize all plates and utensils.
2. Immediately cease using surface disinfectant on food contact surfaces. Provide product information to the Environmental Health Officer for review if operator wants to use this disinfectant in the kitchen.
