Observation: Beef chili was added to the menu for several months from November to January. The beef is puchased raw and cooked in the back kitchen. Cooking beef produces grease laden vapours and must be done under a commercial ventilation hood or in an oven that has a built in, NSF approved ventilation hood with a filter.
Corrective Action(s): Either discontinue this menu item OR use pre-cooked beef OR provide documentation for the oven showing that it has a built in, NSF approved filter within one week.
