Observation (CORRECTED DURING INSPECTION): Cutting board was heavily worn and no longer easily cleanable.
Corrective Action(s): Ensure all equipment is maintained in good condition that is easily cleanable. Cutting board was removed from use.

Comments

- Coolers in kitchen and downstairs were 4 C or colder
- Freezers were - 15 C or colder
- Hand sink had liquid soap, paper towel, hot and cold water
- Spray bottle had 200 ppm quat
- Dishwasher had a final rinse of 74 C at the plate and 180 F at the gauge.
- No signs of pest activity noted during inspection
- General sanitation is satisfactory, a little cleaning required under rack in basement.
NOTE: Renovations are being planned for kitchen, please provide a copy of the floor plans for approval prior to starting renovations.
