Observation: Home made casava and deep fried pork skins from an unapproved food source was offered for sale. All foods displayed and sold to the public must be obtained from an approved food source that is inspected by a government agency. Remove the food products immediately.

Observation: Mildew noted on the fan cover of the meat cooler. To prevent contamination of food products, have the fan cover cleaned.

304 - Premises not free of pests [s. 26(a)]
Observation: Cockroach activity noted in the dry storage area, underneath the dishwasher, and behind hot water tank. The level of cockroach activity had decreased from previous inspections. Last pest report was in Sept 2018. Operator must maintain an ongoing contract with a pest control company to ensure the premises is free of pests.

Comments

Routine inspection conducted and the following were noted:
Hand washing stations satisfactory.
Chlorine dishwasher achieved a final rinse concentration of 100ppm. Ensure chlorine test strips are available to test the dishwasher unit daily to ensure it is in good working order
hot holding of food products at 60C.
All cooler units at 4C and equipped with thermometers.
Stand up freezer at -12C.
2 compartment sink satisfactory
All food items stored at least 6 inches off the ground and properly covered.
General sanitation in the kitchen area has improved from previous inspections. Ensure general sanitation is maintained to ensure there is no accumulation of old food debris and grease to help rectify the pest problem.
