Observation: 1) Only a 1 compartment sink is present in the bakery which is being used to wash/rinse/sanitize all dishes currently.
2) Dishes are being placed on a wooden storage shelf beside the 1 compartment sink which is made of unfinished wood and is extremely sticky
Corrective Action(s): 1) Either install a 3 compartment sink or arrange for all dishes to be washed/rinsed/sanitizer in a 3 compartment sink
2) Either finish the wood such that it is smooth/easy to clean or replace it. As well, install a drying rack such that dishes are not dripping water onto a wooden shelf and onto the floor.
