Observation (CORRECTED DURING INSPECTION): Display unit that is left turned off for display of hazardous food items must have either a timer showing products (like wraps, salads) will be discarded after 2hrs in the danger zone OR store at safe temperatures (<4C)
Corrective Action(s): Example: if wraps are put out at 10:30 a label must indicate either put out at 10:30 OR discard no later than 12:30

Observation (CORRECTED DURING INSPECTION): Dishwasher sanitizer not dispensing. All dishes that have been washed have not been sanitized.
Corrective Action(s): A sink was set up at time of inspection for manually sanitizing. Use 100ppm of bleach solution (1 Tbs for every 1 gallon of water).
Dishes must all get sanitized after running through the malfunctioning dishwasher.
You MUST check your sanitizer daily using test strips (a small amount were provided at time of inspection - ask your chemical supply company to provide a container)
