Back area sliding glass door coolers (2) at or below 4 degrees C.
Hand sink next to baking area provided with liquid soap and paper towels.
Front area hand sink provided with liquid soap and paper towels.
200ppm quats dispensed from chemical dispensing station.
200ppm quats available for use in spray bottles.
Dishwasher registers 74 degrees C at the plate surface during the final rinse cycle.
3 compartment sink available for use.
Dry storage area clean and organized. 3 freezers at or below -18 degrees C.
Operator and staff member has FOODSAFE level 1.
Cambros and insulated coolers available for use.

Reminder: when cooling, cool from 60 to 20 degrees C in 2 hours then from 20 to 4 degrees C 4 hours. Facilitate cooling using shallow pans, splitting into smaller portions, and/or use cooling wands.

Recommend having drivers that deliver hot or cold ready to eat meals to take temperatures at delivery. Cold potentially hazardous foods to be at or below 4 degrees C. Hot potentially hazardous foods to be at or above 60 degrees C.

Dine and take out services pending. New walk in freezer to be installed in the back area. Secure mobile refrigeration unit in use, ambient air temperature at 2 degrees C. Contact your district environmental health officer prior to starting these services.
