Dishwashing sanitizing step must always include the use of the third sink. FIll and use appropriate amount of bleach into sink to achieve 100 ppm solution. Use the white bucket as a sani-bucket for the front area so you can always perform cleaning and sanitizing in a more convenient manner.
**Make sure to use only unscented bleach as a foodsafe sanitizer.

Existing sanitizer (Quats) in spray bottle way beyond 1000 ppm and not safe for food environments or the extensive use of cloths like used in your facility.


Front handsink needs paper towel dispenser and back handsink needs paper towel.
Place dispenser and send picture to me.
**Make sure to use only the designated handsink as a place to wash hands. The two sinks in the front are for rinsing glasses and dumping beverages.
