Observation (CORRECTED DURING INSPECTION): Observation: QUATS sanitizer pail measured at <100ppm QUATS sanitizer. Operator observed changing solution during time of inspection.
Health rationale: Surface sanitizer not at adequate concentrations can allow microbial growth and/or toxin formation on food contact surfaces, which can cause foodborne illness.
Corrective action: Operator observed changing QUATS solution in all sanitizer buckets during inspection. All pails measured 200ppm QUATS concentration. Ensure sanitizer pails are changed more frequently to prevent microbial transfer to food contact surfaces and adequate disinfection of surfaces. Check sanitizer concentration throughout the day with test strips to ensure it is maintained at least 200ppm QUATS.

Observation (CORRECTED DURING INSPECTION): Observation: Scoop for ice machine found inside machine and placed directly on top of ice.
Health rationale: Scoop handles are potentially contaminated equipment which would potentially contaminate food and cause foodborne illness.
Corrective action: Scoop was removed during inspection and placed in scoop storage container. Ensure ice scoop is never placed directly inside the machine and/or on top of the ice to prevent cross contamination.

Observed during inspection:

1) Temperatures:
-2-door stand up cooler at 3C
-Stand-up freezer #1 at -18C
-Stand-up freezer #2 at -18C
-Display cooler #1 at 3C
-Display cooler #2 at 4C
-All under counter coolers in service area at 4C or less.
-Accurate thermometers available in all coolers.

2) Sanitation:
-General sanitation satisfactory during inspection.
-All handsink (2x service area, 1x back room, 2x staff washrooms) supplied with soap, paper towel, hot and cold running water.
-Sanitizer dispenser at 200ppm QUATS
-No signs of pests during time of inspection.
-High temp dishwasher reached 77C at plate surface.
-Ice machine in good sanitary condition.
-Milk steamer sanitized after each use (with 200ppm QUATS)

3) Storage:
-All food is covered and stored at least 6 inches off the ground.
-Time stamps used on foods (first-in-first-out method implemented)

4) Admin:
-Foodsafe Level 1 trained employee on premises during inspection.
