Observation (CORRECTED DURING INSPECTION): Sushi Bar display cooler probed to be at 8.6C at the time of inspection. Operator reports 4 raw fish items in the display cooler were prepared 1 hour ago.
Corrective Action(s): Operator relocated all raw fish items to a working cooler at the time of inspection. DO NOT USE display cooler for PHF until it has been repaired/replaced so that it is able to maintain 4C or lower at all times.
