306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build-up of dirt noticed on the light fixture and the ceiling area near the fixture in walk-in cooler #4. Similarly, some dust noticed around light fixture in all small walk-in coolers.
Corrective Action(s): Clean the light fixture and affected ceiling in all small walk-in coolers. The ceiliing, cooler fan covers and light fixtures must be on a monthly cleaning schedule ( By March 20,2020).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: One of the tube light fixtures in the main walk-in cooler is not working. The protective shield/ lid is broken.
Corrective Action(s): Do not store any food trays underneath this light fixture. Repair or replace the light fixture and shatter-proof light cover ( immediately).

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Noticed damaged drywall in some sections behind stored dry goods in the dry storage room.
Corrective Action(s): Either repair & repaint the dry wall or install a washable FRP panel to at least 4 feet height (April 10, 2020).

Routine inspection of the LMH Main Ktichen and all ECU serving kitchens.

Main walk-in cooler registered 2 degrees C.
Walk-in freezer < -20 C.
Small walk-in coolers registered below 4 degrees C.
Upright coolers < 4 C.
Sandwich preparation cooler < 4 C.
Portioning room temperature at 10 C.
All hand washing stations supplied with liquid soap and paper towels.
Dry storage area appeared clean and well organized.
Quats sanitizer (Ostro san) tested 200 ppm in spray bottles as well as in third sink.
Dishwasher final rinse registered 72.3 C at plate surface.
Sanitizer monitoring logs are up to date.
Temperature logs are up to date.
All staff wore hair nets and clean aprons.
Food handling practices satisfactory.
No signs of pest(s) noted throughout the facility. Good.
Weather stripping has been replaced on the loading area bay doors.
*Ensure to keep checking for gaps underneath any exterior doors and adjust weather stripping as necessary.
