Observation: Found large container of sliced meat cooling in the fridge.
Corrective Action(s): Remind all staff of proper cooling procedures, e.g. in shallow pans and small portions. Cool from 60 C to 20 C in 2 hours then place in cooler to cool to 4 C in 4 hours.

Observation (CORRECTED DURING INSPECTION): Found falafel sitting in cooler that was 12 C
Corrective Action(s): Ensure all potentially hazardous foods are kept below 4 C, cooler was adjusted at time of inspection. Food was discarded.

Observation: 2 door cooler was found to be 12 C, must be able to maintain 4 C at all times.
Corrective Action(s): Temperature was adjusted, continue to monitor and repair/replace if not working. Discard any potentially hazardous foods that were inside for more then 2 hours.
