Observation (CORRECTED DURING INSPECTION): Display cooler next to the front desk was measured at 8C. This cooler was holding vegetarian cakes. The staff member manually lowered the temperature on the digital dial to 4C. By the end of the inspection the cooler was measured at 4C.
All of the cakes that were stored in the cooler had been inside for less than two hours. The shop had just opened an hour before the inspection.
Corrective Action(s): Ensure all coolers can maintain 4C when holding cold potentially hazardous foods

Observation: Standing display cooler has food debris and spillage build-up along the doors.
Corrective Action(s): This should be cleaned and sanitized. Ensure all coolers are cleaned frequently to avoid build-up of debris and other possible contaminants

Observation: Display cooler by the entry door is not working. This cooler is holding non-potentially hazardous foods (pop and non-perishable drinks). Staff member explains that a repair is scheduled in the coming days.
Corrective Action(s): Ensure no potentially hazardous foods are placed in this cooler until it is fixed.

Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Hand wash sink near the glass display was backed up due to a block in the plumbing.
Correction: Operator has called plumber to fix the blockage to repair the hand sink. Temporarily using the the sink in the preparation room to wash hands and using gloves. Due to limited food handling and easy access to working hand sink, premise allowed to remain open for today.

-3 compartment sink is used appropriately. Bleach sanitizer is available
-Labelled sanitizer spray bottle containing bleach solution achieves 100ppm Chlorine
