Observation: Front door is kept open.
A few flies in deli area and on surfaces; not excessive.
Prep areas with food debris.
Some items such as popcorn, sausages in boxes stored on the floor and in corners around and the line cooler area.
Corrective Action(s): Keep doors self closing during hot summer months when flies are most active.
Install more light traps and other traps.
Ensure all areas are free of food debris and residue including surfaces and underneath counters.

Observation: Note that deli has many menu items and more dry storage is needed to maintain food safety.
Not enough racks, cabinets or shelving are in place for adequate dry storage, container storage or staff use.
All food storage must be off the floor.
Some food debris on storage shelf below sandwich prep area where single use containers are being stored.
Some items such as sausages (packaged), Popcorn (packaged), baking racks, and other items are stored on the floor.
Clean dishes and dried goods for bakery are in milk crates that are difficult to clean on regular basis.
Not enough racks are in place for clean dish storage above the dish washing area (3-comp sink).
Corrective Action(s): 1. Install wire racks, drainage racks or other racks with durable, cleanble surfaces above the dishwashing area.
2. Install shelves, racks or other storage shelving to ensure all food and food containers can be stored on clean shelves above the floor.
