2) Multiple food items stored uncovered inside the walk in cooler.
3) Bags of raw onions/potatoes stored in the back storage room beside the mop drainer. This area is not designated for food storage.
Corrective Action(s): 1) Dry food items must be stored in pest proof carts or containers with proper lids.
2) Cover all food items with plastic wraps or proper lids.
3) Store all food items in the designated dry food storage area.

2) Build up of grease and food debris underneath the dishwasher and the two compartment sink.

Corrective Action(s): Clean the areas noted above. Implement a regular cleaning schedule for all equipment and food contact surfaces.

Comments

- General sanitation needs improvement. See violation section.
- All other coolers (walk in, prep, upright, display) < or = to 4C.
- All freezers (walk in) < or = to -18C.
- Daily temperature log is missing prep coolers and display coolers. You must begin a temperature log and include all coolers and freezers. Keep records for review by the health inspector.
- Please ensure to follow the proper manual dishwashing procedure for oversized/large pots/pans that do not fit inside the low temperature dishwasher.

3) sanitize (fully submerge pots for 2 mins in 100 ppm chlorine solution at 45C)
4) air dry
- Low temperature dishwasher dispensed 50ppm chlorine sanitizer at 29.9C at the plate's level. You must obtain new chlorine test strips and monitor the dishwasher daily (ie. before opening). The minimum acceptable chlorine concentration is 50ppm at 24C at the plate's level.
- Dry storage area is satisfactory.
- No signs of pest activity.
- FOODSAFE certified staff could not be verified at the time of the inspection. Make copies of all FOODSAFE certificates and have it available for review by the health inspector. At least one FOODSAFE certified staff must be working at all times.
Note: FOODSAFE certificates obtained prior to July 29, 2013 expires on July 29, 2018. Must take refresher course to receive recertification.
