General: - handwashing station stocked with soap, paper towels and hot and cold running water - hairnets available for staff - sanitizer measured 200ppm quats - dishwasher reached 71C at the final rinse cycle - replace dishwasher racks as the plastic is flaking off - foods dated to facilitate FIFO - odour seems to be coming from grease trap; please address - minor pest activity noted in pest report - restaurant has already taken steps to address this Temperatures: - pizza hot holding unit: 70C - front pop display cooler: 4C - back pop cooler: 4C - under the counter freezer: -16C - prep cooler (top/bottom): 4C/3C - upright cooler: 4C - walk-in cooler: 3C - walk-in freezer: -18C* - temperature logs are kept digitally twice a day * Manager stated that new walk-in freezer door was on order as it is unable to close all the way.
