Observation:
1) The plastic platforms and pallets found in the food production room has accumulated food, and mildew on them. This may contaminate foods or other surfaces.
2) Food and water stains found on legs of sinks, tables and the underside of sinks. This may contaminate foods or other surfaces.
Corrective Action(s):
1) Wash and sanitize the plastic platforms and pallets. Add these items to your cleaning schedule, and plan to replace these items made of easier and more durable materials.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; thermometers present; and temperatures recorded twice a day.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitize was 200ppm. Test strips present and used.
- The foot bath had [Cl2] of 200ppm. The foot bath sanitizer is tested twice a day and changed when needed.
- New flooring was installed in November 2019. A new epoxy floor was installed and more slope installed to encourage water to the the floor drains.
- Food flow is good.
- A metal detector has been purchased and will be installed in the production room prior to packaging.
- All foods stored in food grade containers; covered; labeled; date coded; and all foods stored 6" off the floor on racks, shelves, and platforms.
- No expired foods in used. FIFO rules being followed.
- HACCP program being implemented. Good work.
- General sanitation level is good.
- No signs of pests. Orkin is contracted monthly to monitor for pests.
