Observation (CORRECTED DURING INSPECTION): Knives, whisks, and other in-use utensils were being stored in a container of Quat sanitizer.
Corrective Action(s): Discard the sanitizer and allow the utensils to air dry before using. Discontinue this practice due to potential of chemical contamination of food. Either clean utensils after each use or store using one of the following methods:
- Dry in a clean container
- In a container of ice water. Replenish ice as needed.
- In a container of hot water ≥ 60°C
Regardless of storage method, the utensils and storage container must be cleaned and sanitized at least every 4 hours.
