Observation (CORRECTED DURING INSPECTION): Deli meat at 10C. Air temperature at 9C. Sliding doors were opened. All foods moved into walk-in cooler.

Corrective Action(s): Protect the food in the walk-in cooler from comtamination. Clean and sanitize ceiling with 100ppm bleach solution.

Observation: Cooler not able to maintain food at 4C or below.
Corrective Action(s): Do not use cooler. Deli cooler must be repaired to meet cold-holding temperature requirement of 4C or below. Once cooler is repaired to meet 4C or below, then foods can be moved back. Do not put too much food in the display cooler or block any source of air circulation.
