Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: - Spill/food residue present on bottom shelf of True single door stainless cooler
- Spill/food residue present on top of 2 door freezer (used as food prep surface)
- Numerous soiled wiping cloths stored on cutting boards (food contact surfaces)
Correction: - Clean and sanitized above noted areas.
- Store wiping cloths in sanitizer solution. Note: Sanitizer solution was present; however cloths were not stored in it.

Comments

- Line cooler in kitchen was replaced with new unit. Cooler operating at 2C. Thermometer present.
- Left countertop sushi cooler was replaced with a new unit. Cooler operating at 1C. Thermometer present.
- Right countertop sushi cooler was checked by Refrigeration mechanic/technician. Cooler operating at 0/-1C. 2 thermometers present in unit. *1 door which was allowing air to escape was replace with another piece in the interim until custom made doors are in place. New doors have been ordered and will arrive within 2-3 days. Manager to send email and photo to confirm once in place.
- Coolers must be monitored daily to ensure they are operating at 4C or below. Manager has prepared log sheet to record temperatures.
- Areas which were outlined in previous report have been cleaned. The sanitation and organization of the premises has improved. This level of sanitation must be maintained and floor must be kept clear to facilitate cleaning.
- Mouse droppings have been removed and area cleaned. No additional droppings noted.

Closure Order rescinded. Premises may re-open.

The following items are pending and must be addressed:
- Submit contract/agreement with Pest Control technician for regular service
- Submit confirmation that 2 door undercounter freezer has been serviced at -18C.
- Submit confirmation once new doors on right countertop cooler are in place.
