Observation (CORRECTED DURING INSPECTION): The bleach spray bottle had 0ppm chlorine residual concentration on the time of inspection.

Corrective action: Discard the bleach solution immediately and refill the bottle with the proper bleach residual concentration. (1/2 teaspoon of bleach per litre of water). Proper bleach solution residual concentration ensures adequate disenfection on food contact surfaces.

Observation (CORRECTED DURING INSPECTION): 1) A tray of cut lettuce was not covered in the walk-in cooler.

Corrective action: Operator placed a plastic lid to cover the cut lettuce. All food stored in the walk-in cooler needs to be covered to prevent any potential contamination.

2) A bag of potatoes was stored on the ground under the handwashing station in the kitchen.

Corrective action: Operator placed the bag of potatoes on the crate so they are stored off the floor. all foods need to be kept at least 5" off the floor to prevent any contamination.

Observation: A sanitizer spray bottle did not have a proper label on the bottle.

Corrective action: Label the sanitizer spray bottle to ensure the bottle is only used for sanitizer solution. Improper labeling can result in food contact surfaces not adequately sanitized.

General comments:
-Handwashing station is equipped with hot/cold running water, liquid soap, single-use paper towel.
-All prep coolers at 4.0C or below
-Walk-in cooler, ambient temperature measured at 6C, probed tomato sauce located in walk-in cooler at 5.0C. Operator informed that walk-in cooler was used frequently in the last hour. Continue to monitor and ensure temperature is at 4.0C or below at all times. Adjust or service if required.
-All freezers at -18C or below
-All coolers & freezers are clean & organized.
-All coolers have a thermometer for temperature monitoring.
-All food utensils clean at the time of inspection.
Staff washroom is equipped with hot/cold running water, liquid soap, and single-use paper towel.
-No signs of pest activity at the time of inspection.
-Operator has a valid Foodsafe Level One Certificate.
-A valid operating permit is posted or the well by the kitchen entrance.
-General sanitation is good.
