201 - Food contaminated or unfit for human consumption [s. 13]
Observation (CORRECTED DURING INSPECTION): 1. 2 blocks of butter stored unprotected (no wrapping/ nor is it stored in a container) by the floor on top of a cardboard box in the walk-in cooler.
2. Dough was noted stored within a garbage bag in the walk-in cooler.

Corrective Action(s): **Issues were corrected during the inspection** The 2 blocks of butter and dough was discarded into the organic bin by staff.
All food must be stored protected in a food grade container and covered with a lid/ plastic wrap to avoid potential contamination.
Chemicals are commonly found in garbage bags for the removal of odor and therefore food should never be stored directly in contact with a garbage bag to avoid the transfer of chemicals to food that may lead to a chemical hazard for the consumers.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Missing paper towel noted in the paper towel dispenser by the walk-in cooler.
Corrective Action(s): **Issue corrected at the time of inspection** Staff refilled the paper towel dispenser. Please ensure all handwash stations must be stocked with paper towel and liquid soap at all time to allow for proper handwashing when required.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Multiple containers of food (e.g. cooked chicken wings, rice, cheese, pasta, green onion, chick peas, diced chicken, etc.) were noted in all refrigeration units uncovered and unprotected.
2. A container of pineapple (unwrapped/ unprotected) was stored directly on the floor in the walk-in cooler.
3. Exposed light bulbs noted on 1 light fixture by the cash register - also noted during the last routine inspection.
4. Improper dispenser (bowl), with no handle, was stored and used as a dispenser in a bulk flour bin.
Corrective Action(s): 1. Cover all food in all refrigeration units. All food must be stored protected with a lid or plastic wrap to avoid potential contamination while in storage, especially in the walk-in cooler. Any food in active use during rush hours may be stored uncovered temporarily. However, after rush hours, these food should be covered/ protected immediately.
2. Staff was instructed to move the container of pineapple off the floor and have the container protected. All food must be stored at least 6 inches off the floor and protected to avoid debris from being kicked into the food.
3. Replace missing light shield.
4. Remove the bowl and use a proper dispenser with a handle. Store the handle away from the flour.

304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings noted in the following areas:
- In the cabinets by the cash register.
- Floor below the 3-compartment sink.
- In the dry storage area (by the back door) - floor and shelves.
- Floor by the dough machine.
Corrective Action(s): Clean, sweep and sanitize all areas noted with mouse droppings to help with monitoring pest activities.
As per staff, an external company comes in bi-weekly for inspection and setting traps. Continue to work with the pest control company to help mitigate and eliminate pest issues. Keep the facility in a sanitary condition and have all food stored protected to remove any food sources for the pests.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Debris noted on the floor by the upright freezer and in the cabinet below the handwash sink closest to the cash register.
2. Black buildup noted on the caulking by the 3-compartment sink.
Corrective Action(s): 1. Clean the aforementioned areas and maintain in a sanitary condition at all time.
2. Remove the old caulking by the 3-compartment sink and re-do the caulking if the black buildup cannot be cleaned off.

Comments

Routine inspection conducted today:
All handwash stations (except for the unit noted in the violation above), including staff washroom, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4C.
Front 3-door reach-in cooler was holding food slightly over 4C (cooked chicken wings at 6.0C, opened container of 4 L milk was at 6.9C). As per operator, staff is in and out of this reach-in cooler and therefore may be the cause of the elevated temperature. However, noted that the facility was not busy at the time of inspection. This cooler was overfilled with products, which may have impeded air flow. The cooler's lowest ambient air temperature was able to reach 3.6C. Instructed staff to remove what is not immediately needed to another functioning cooler to decrease the load in this unit to help with air flow. Please monitor and avoid over-filling this unit. May want to consider lowering the ambient temperature of this unit.
All freezer units were at -18C.
Chlorine sanitizer were available in spray bottles. 200 PPM chlorine residual detected.
Sanitizer spray bottles were however located in the staff washroom. Sanitizer spray bottles must be available in the food preparation area during active food preparation to be used when required.
Drain plug available for the 3-compartment sink for manual warewashing.
Supervisor's (onsite at the time of inspection) FOODSAFE level 1 equivalent is valid.

Spoke to the operator regarding the repeated violations noted that are similar to the ones also cited for during the last routine inspection (report# KLAI-CGGSNJ). Not much improvement has been noted since the last routine inspection. Any further repeated violations WILL result in increase enforcement actions (Order/ ticketing/ condition or removal of permit, etc.).
