Observation (CORRECTED DURING INSPECTION): 3-compartment sink was not prepared with bleach sanitizer. Facility has been open for 1.5 hours.
Corrective Action(s): When in operation, ensure 3-compartment sink is prepared with bleach sanitizer at 100ppm to allow for sanitizing of equipment and utensils. Bleach at 100ppm was prepared at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Cheese was being shredded into a bus pan placed on top of a garbage can.
Corrective Action(s): Do not prepare food on top of a garbage container. Garbage containers are considered dirty. Garbage can was replaced with a chair at the time of inspection.

Observation: Prep cooler door seals are broken and need to be replaced.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 3C (top and bottom).
-Chest freezer was at -16C.
-Handwash station in front and shared with 3-compartment sink supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach spray bottle in pizza area labelled and tested at 100ppm.
-Deli slicer cleaning and sanitation satisfactory. Small amounts of food debris were found on the arm. Ensure arm area is properly scrubbed with a brush to remove food debris.
-Foods properly stored off the floor and covered at the time of inspection.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
-FoodSafe Level 1 issued July 23, 2000. FoodSafe Level 1 certificate will expire on July 29, 2018. In order to meet the FoodSafe requirement, certificate must be valid/not expired.
