Observation (CORRECTED DURING INSPECTION): Quats sanitizer pail by the fryer station was less than 100ppm.
Corrective Action(s): Quats sanitizing solution must be maintained at 200ppm to properly sanitize food contact surfaces. Quat sanitizer pail was refilled with 200ppm sanitizing solution at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Vegetable cutter had dried food debris on the blade.
Corrective Action(s): Ensure all equipment is properly washed and sanitized after each use to prevent potential cross contamination. Slicer was disassembled for cleaning and sanitizing at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Pizza prep coolers were at 2C and 4C.
-Upright coolers were at 4C.
-Double door freezer (next to proofer) was at -16C.
-Single door upright freezer was at -18C.
-Double door freezer by fryer was at -18C.
-Hot holding cabinet was greater than 60C.
-Chicken wing bites were reheated to greater than 74C.
-Temperatures are checked and recorded daily.
-General food storage practices good at the time of inspection. Foods stored off the ground and covered.
-High temperature dishwasher had a final rinse temperature of 77C on the dish surface (minimum of 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer dispenser tested at 200ppm.
-General sanitation good at the time of inspection.
-Facility serviced by a processional pest control operator on a monthly basis.
-No signs of pests noted at the time of inspection. Tin cats inspected.
-Washroom clean and well maintained.
-FOODSAFE Level 1 valid until April 24 2023.
