Observation (CORRECTED DURING INSPECTION): Hand sink in back prep kitchen was missing liquid soap and paper towels. Paper towel dispenser for the back hand sink had also been broken off.
Corrective Action(s): Ensure all designated hand washing sinks are supplied with liquid and paper towels in dispensers. Operator provided hand sink with liquid soap in a pump dispenser and a roll of paper towel in the meantime.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The main prep cooler was not working (measured 17C at time of inspection) and was not in use for storage of food items in the bottom portion, however the top portion (inserts) was being used. Operator stated that the inserts are only used during busy rushes and are normally kept in other refrigeration units in the back. Ingredients kept in top portion inserts were still at 4C or colder at time of inspection.
Corrective Action(s): Repair or replace your main prep cooler. A properly working prep cooler must be available for use onsite for your operations. Do not store any items in this cooler until it is capable of maintaining temperatures at 4C or colder. If using top portion inserts during busy rushes, ensure to only fill each inserts halfway and discard any leftovers every 2 hours. Create a time-tracking log for health inspector to review.

Corrective Action(s): Operator stated renovations are scheduled to occur 4-6 weeks from today. Ensure all surfaces are smooth, durable, non-absorbent, and easily cleanable. Ensure food preparation/service is not being done during renovations.

Comments

- Routine inspection conducted.
- Note: Operator stated hot water tank is being replaced later today. Follow-up inspection required for tomorrow.
- Hand sink in the front area was properly supplied.
- Quats sanitizer solution available at 200 ppm. Test strips to be obtained.
- High-temperature dishwasher reached 73C at the dish surface during final rinse cycle. Good - minimum of 71C at the dish surface is required.
- Coolers in the back prep kitchen and in the front retail area (for customer orders) measured 4C or colder.
- Freezers measured -18C or colder.
- Hot-held chicken measured at above 60C. No hot-held rice/quinoa at time of inspection.
- Staff onsite had valid FoodSafe certificates.
- Raw wooden boards for mounting microwave shelf and wall shelves have been painted since previous inspection and are now non-absorbent, smooth, and easily cleanable - good.
- Food storage practices satisfactory.
- Some fly activity noted in the janitorial closet at time of inspection. Contact a professional pest control company for servicing if needed.

** Discussed outstanding operating permit fee. Staff will be calling to pay today.
