Follow-up for report# KLAI-D33R84
Both the prep/ dough cooler and front server cooler have been fixed.
Server cooler noted at 4.0C.
As for the prep/ dough cooler, air temperature is set around 5.0C (measured at 6.3C at the time of inspection - mainly due to this unit being in constant active use due to the lunch rush). Not much cold potentially hazardous food is stored within this unit. Mainly for pizza dough. Chef knows that any meat or sliced produce (cold potentially hazardous food items) that is brought in this unit from the walk-in cooler for the lunch rush is discarded after 4 hours.
Huge improvements noted on the cleanliness of the facility, especially the hard to reach areas. Debris and buildup previously is now noted cleaned and sanitary. Keep up the good work in maintaining the cleanliness on a daily/ weekly basis.
Dish washer is functioning and noted with 100 PPM chlorine residual.
During the inspection, observed operator and staff replacing the lining/ shelf in the bar reach-in cooler - excellent.
Ensure to cover (lid/ plastic wrap) food in the freezer after the lunch rush to avoid frost/ contaminants from falling into the food containers.
