209 - Food not protected from contamination [s. 12(a)]
Observation: Noticed raw chicken in plastic totes stored above ready to eat food products such as kimchi and vegetables.Similar buckets (used soy sauce buckets) were being used for storing raw chicken and cut radish (used as salad) which could lead to cross contamination if buckets do not get properly cleaned and sanitized.
Corrective Action(s): 1. Raw meats/poultry items must be stored on the bottom shelves and below any ready to eat food items ( Immediately)
2. Use separate designated storage containers (e.g. color coded buckets) for radish/vegetables and raw chicken, respectively. ( immediately).
3. Use separate ( color coded) tongs and cutting boards for raw meats/poultry and ready to eat foods/salads.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build-up of dirt, grease and food spills noticed on the floor throughout the kitchen especially underneath/behind equipment/ hard to reach areas. Ceiling tiles above the dishwasher appeared very dirty.
Corrective Action(s): Clean floor throughout the kitchen using commercial floor cleaner/degreaser. Clean the dirty ceiling tiles.
Remove any freezers that are currently not in working order. Do not store cardboard boxes behind deep freezers and other equipment ( July 16, 2021).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Dishwasher liquid detergent bottle was empty at the time of the inspection.
2. Door seal/gasket worn out on the line cooler across from the grill.
Corrective Action(s): 1. Ensure that the dishwasher is hooked up to appropriate liquid dishwasher detergent. Operator stated that detergent is on order ( Immediately) In the mean time, ensure that all dishes and utensils are washed manually before being sanitized in the dishwasher.
2. Replace the broken/workout door gasket on the cooler.

Comments

* Use only food-grade spray bottles for storing water. Discard the bottle currently being used for storing water.
* Ensure that all spray bottles of bleach sanitizer are labelled with the following information:
-Name of the chemical e.g. bleach sanitizer
- Dilution ratio ( e.g. 1:50 or 200 ppm )
* Install a wall-mounted liquid soap dispenser at the hand sink located at the entrance to kitchen..
* Ensure to monitor and record cooler and dishwasher final rinse temperatures at least once a day.

Upright coolers below 4 C

Deep freezers < -18 C
Salad cooler ( front) < 4 C.
Bleach sanitizer in spray bottles tested 200 ppm.
Dishwasher final rinse: 73 C at the plate surface.
Hot holding of rice > 60 C.

A follow up inspection will be conducted to confirm compliance.
