Observation (CORRECTED DURING INSPECTION): Dishes are not being washed adequately in the 3-compartment sink.
Corrective Action(s): All dishes must be washed with soap in the 1st compartment, rinsed with clean water in the 2nd and then sanitized in the 3rd compartment (use 1/2 tsp bleach per L of water) for at least 2 minutes before air drying.
