203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Walk in cooler and contents were observed to be stored at 6.5C or higher for more than 7 hours. Digital display of walk in cooler indicates it is at 2C. Operator informs me perishable foods were stored in there from yesterday and this morning. The temperature of this unit was monitored during the inspection for over 2 hours and remained above 6.5C. Peri peri sauce, ambient air and chorizo sauce were monitored.
Corrective Action(s): All improperly cooled perishable foods were discarded as indicated below. Repair unit to ensure food can be stored consistently at 4C or below.

1. Doorway trim in kitchen.
2. Base boards in merchandise area.
3. Caulking along wall panel of FPR near back door, staff washroom and some noted areas.
Corrective Action(s): Apply final touches and construction by follow up inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1.Walk in cooler at 6.5C ambient. Digital display outside the door indicates 2C. 4C or below is required. A working digital thermometer or accurate thermometer is required.
2. Water leak observed behind ice machine.
Corrective Action(s): Repair these units by follow up.

Comments

Inspection was conducted to review renovation and upgrade of new facility. Facility not in operation.
The following was observed at the time of inspection.
Premise is built in accordance to approved plans with some cosmetic finishes required as noted above.
Lockers in washroom are not yet installed.

Premise in general is sanitary. No signs of pests at the time of inspection.
Hot and cold running water available.
Dedicated hand sinks available with liquid hand soap, paper towels and running water.
Quat sanitizer in use at 300 ppm.
All cooking equipment is operational.
Drying racks and storage racks available. Storage of food protected from contamination.
Light covers in place. Lighting for food preparation is adequate.
Fume hood is operational.
Staff washroom is sanitary with fully stocked hand sinks.
Accurate temperature monitoring available for units except walk in cooler.
All other equipment in good working order with exception of walk in cooler.

Main kitchen area.
Back door is upgraded and prevent entry of pests.
3 compartment sink, 1 prep sink, 1 self contained mop sink.
1 dough press. 1 toaster. 2 grills. 1 oven. 1 deep frier.
Hot holding units at 116C, 3 compartment unit 61C. Ceremic table top warmer at 101C
Counter cooler 1 at 2.5C. Stand up freezer at -19C.
Ice machine is operational. Ensure to have dedicated scoop stored in a sanitary manner.

Front island food service:
Pizza station display cooler 1.2C, bottom 3C, inserts 3C. Beverage cooler 3C.
4 Soup wells all above 70C. Counter cooler 4C. Counter warmer for pizza at 63C.
Beverage and ice cooler at 3C. Dessert cooler 1 & 2 at 0C outside, bottom at 0.9.
Latte counter cooler at 0.5C.
Hot water spoon holder at 62C with timer.
Chest ice cream cooler at -12C (ice cream bars).
1 prep sink and ice station.

Self serve condiments station is sanitary with fully stocked working hand sinks.
Microwaves will be placed here for patron use.

The following perishable food items due to improper cooler for more than 2 hours:

7 cans of peri peri sauce. 1 container of chorizo sauce. 1 container of hoisin tofu. 1 container of white garlic sauce.
Large containers of turkey soup, prepared soup and salads. 1 container of curry.
Containers of prepared slice cheese and cooked onions.
36 containers of To Go Milk regular and chocolate.
25 containers of humus. Bags of boiled eggs.
3 bags of hot pickled bags.

Approval to operate only given to front coffee and pizza service island. Ensure City approval and requirements are met as well.
Cooking units and walk in cooler of main kitchen is not to be used until approval and verification on follow up inspection.

Only limited food items intended to be served at the food island to be sold at this point in time. Pizza sale is ok.

Note: Fume hood needs sticker replacement of last licensed cleaning.
