209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Leafy greens were observed in a box that had been previously used to deliver and/or store raw chicken. The box bottom was lined with garbage bags and the contents were covered in newspapers.
2. Raw shell eggs stored over vegetables in walk in cooler.
Corrective Action(s): 1. Leafy greens were discarded by the operator during the inspection. To limit potential cross contamination, ensure that containers previously used for raw meats or shell eggs are not used for potentially ready-to-eat foods, such as produce. Cardboard boxes should not be reused. Newspapers are not suitable for food storage as they are not considered sanitary and ink may potentially transfer to foods. Garbage bags are not suitable for food storage as they may potentially contain preservative chemicals that may transfer to foods.
2. Raw shell eggs re-located at time of inspection. Ensure that raw shell eggs and raw meats are not stored above any potentially ready-to-eat foods to limit potential contamination of foods below.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): A bag of meat was observed thawing at ambient temperatures. Surface temperature was measured at 6 degrees C.
Corrective Action(s): Bag of chicken was placed into prep sink under cold running water. Ensure that all potentially hazardous foods are properly thawed (e.g. under cold running water, in walk in cooler) to limit the growth of potential pathogens and/or toxins.

Observation: Ventilation hood canopy has an accumulation of grease.
Corrective Action(s): Ensure that ventilation hood canopy is properly cleaned. Grease may attract pest activity and may potentially contaminate food and/or food contact surfaces below. Date to be corrected by: June 29, 2018.

Probed items in the walk in cooler were measured at 4 degrees C or less. Cooling procedures were reviewed with the operator and staff. A handout that demonstrates proper cooling procedures and requirements is posted in the kitchen.
Scoop handles were observed to be stored outside of food product. Knives were not observed in the space between the prep cooler and counter.
Bleach water sanitizer is available in a container with wiping cloths (front) and in a labeled spray bottle (kitchen), both measured at 200 ppm chlorine. Reminder that if wiping cloths are used in the kitchen, they are to be stored inside of a sanitizing solution (100 to 200 ppm chlorine).
Back door was observed to be closed at the time of inspection.
A functional probe thermometer is available on site.
Discussed maintenance of daily temperature logs.
