Routine inspection conducted.

Findings:
- Facility is very well maintained.
- Temperature of coolers including prep coolers, walk in cooler recorded at or below 4C
- Temperature of chest freezers noted at or below -18C.
- Stainless steel 2 door freezer at -16C
- White stand up freezer at -6C
- Small freezer in food prep area at -15C
- Hot holding units (cooked rice) above 60C
- Sushi rice stored at room temperature and pH tested below 4.0
- Handwash sinks available and had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- Sanitizer spray bottles properly labelled and 200ppm bleach concentration recorded.
- High temp mechanical dishwasher recorded at 75.3C on dish surface during rinse cycle.
- Excellent food storage practices observed.
- Mechanical traps present and back door was closed to prevent rodent issues.
- Ice machine was maintained in sanitary condition and scoop was stored outside in a sanitary manner. Good.
- Permit posted at the front.
- Operator has valid FOODSAFE Level 1 (Exp August 6, 2027).

NOTE - Vents are due for service this month.
