Observation (CORRECTED DURING INSPECTION): Large containers containing PHF's need to be broken down into smaller containers in order to rapidly cool. PHF's must be cooled from 60c to 4c within 6 hours.
Corrective Action(s): Institute rapid cooling as discussed using ice baths to speed up cooling.

Observation (CORRECTED DURING INSPECTION): Chicken in the chicken sauce not being properly cold held. Internal temp at 7c. Product at 2 hour limit.
Corrective Action(s): All phf's (potentially hazardous food) must be kept at refrigerated temperature (<4c). If over 2 hours, all phf's are to be discarded. To prevent waste, always keep phf's refrigerated until product is needed. When an order is made, remove and reheat only the portion required to fill the order. Recommend installing a small fridge near the hot holding unit due to the change in restaurant operation with no seating due to the covid-19 directive.
