Comments

Follow-up inspection to routine conducted on June 4, 2018 (RPT#: JMAA-AZEVMQ).

Lids have now been placed on all cooling wells when not in use. Ice placed underneath cooling wells to further maintain temperature of contents.
- All potentially hazardous foods inside were the cooling wells were at 4C or less at time of inspection
Imitation crab meat at 4C
Shredded meat at 2C

- Concerns regarding sanitizer concentration have been addressed: Bleach sanitizer at 200 ppm at time of inspection. Operator reminded that 1 teaspoon of unscented bleach should be added to 1L of water (or 1 tablespoon / gallon of water) to make a 200 ppm bleach solution.

Thank you for your efforts. Please ensure that all potentially hazardous foods inside cooling wells stay beneath 4C at all times. Reminder: Begin temperature log to log temperature of coolers.

No other concerns at this time.
