Observation (CORRECTED DURING INSPECTION): No surface sanitizer available at the time of the inspection to sanitize equipment and food contact surfaces in the produce preparation section.
Corrective Action(s): The staff prepared new sanitizer at 100ppm chlorine concentration. Sanitizer must be available at ALL times to adequately sanitize food contact surfaces during food preparation.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): The main handwashing station was completely blocked in the produce section at the time of the inspection. There were boxes of food (ie whole vegetables, fruits) directly in front of the sink and the sink was made inaccessible by staff.
Corrective Action(s): Remove the boxes. Keep this area clear of any obstructions to allow easy access by staff at all times. The staff must be able to wash hands at any given time during food preparation.

Observation: Significant fly activity in the produce section.
Corrective Action(s): Contact your professional pest control management company and discuss options to control fly activity. The premises must be free of flies or the activity is low enough to prevent significant contamination of food during the next routine inspection.

Observation: Too much clutter and boxes in the produce section. Boxes were stacked directly on the floor and there was significant build up of garbage.
Corrective Action(s): Clean up the clutter and remove empty boxes. All boxes must be stored at min 6inches (15cm) off the floor to facilitate in cleaning.

General Store:

- General sanitation needs improvement.
- Three compartment sink available for manual dishwashing. The operator must provide adequate shelving units for air drying.
- All display coolers at < or = 4C
- All freezers at < or = -18C
- Working thermometers in each refrigeration unit.
- Daily temperature log maintained and kept up to date. Ensure to continue monitoring the temperature daily.
- No signs of pest activity. A professional pest control management company inspects the premises on a routine basis.
- Random food items (i.e. dairy products, eggs) checked for expiration dates, condition of packaging, and any signs of deterioration. All in good condition.

Note:
- The surface sanitizer concentration levels in spray bottles are very inconsistent throughout the store. Ensure that you follow the written Sanitation Plan which details how to properly prepare surface sanitizers (ie min 100ppm chlorine concentration OR 200ppm QUAT concentration) and train ALL staff to follow this method.
- Obtain chlorine test strips to monitor the surface sanitizer concentration levels daily.This will be verified during the next routine and follow up inspections.
