Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1) Dough machine, dry ingredient bins and lids, and faucets for hand washing stations were heavily soiled with food debris.
2) No clear area in dishwashing area designated for "dirty" and "clean" dishes.
Correction: 1) Ensure to clean and sanitize the dough machine after each use.
Clean and sanitize lids of dry ingredient bins, and do so on a weekly basis.
Clean and sanitize all sink faucets, and do so on a daily basis.
2) Ensure dirty dishes are stored to the left of the dishwasher where the pre-rinse sink is located, or stored in one compartment of the sink. The area directly to the right of the dishwasher is for clean dishes only.
Correct by: Immediately.
Comments

- Dough machine has been cleaned and sanitized - good. Ensure to clean and sanitize after each use.
- All dry ingredient bins, lids, and scoops have been cleaned and sanitized. Reminder that scoops must not be stored directly in dry ingredients.
- All sink faucets have been cleaned and sanitized.
- All refrigeration unit doors, handles, and interiors have been cleaned and sanitized
- All food was stored properly covered. Ensure no food is stored directly on the floor (for example, bags of rice must be stored on shelving unit)
- Dishwasher area was organized. Clear distinction between clean and dirty areas observed.
- Bleach sanitizer solution was available in several new spray bottles at 200 ppm - good. Ensure wiping cloths are also stored in a bucket of 200 ppm bleach solution.
- Pest control report dated September 10, 2018 was available for review. No rodent activity found, however silverfish and ants were found and treated. Ensure to continue with regular pest control service for insects. Ensure all pest control reports are kept onsite.

**Shelving units for storage areas still need to be installed.
