302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bleach sanitizing pail inside auxiliary (back) kitchen was almost a pure mixture of bleach.
Corrective Action(s): Sanitizing pail was reformulated so that there was approximately 200 ppm chlorine residual inside the bucket. Stainless steel tables were re-sanitized properly prior to any additional food preparation. DO NOT USE pure mixtures of bleach to sanitize any food contact surface, as this may result in chemical contamination of your product!

Observation: Multiple issues observed:
1. Chickpea mixture bin stored directly on the floor in main kitchen.
2. Multiple bins of food storage products in small storage room inside main kitchen directly on the floor.
Corrective Action(s): 1. Chickpea mixture was elevated off the floor. This is a repeat violation - further infractions may result in additional enforcement measures including the issuance of a correction order. No food products should be stored directly on the floor.
2. Re-organize your dry food storage products so that all items are elevated at least 6" off the floor. This also facilitates easy cleaning of your storage room.

304 - Premises not free of pests [s. 26(a)]
Observation: Dry storage garage has accumulated significant rodent droppings in the following areas:
- On the floor underneath the flour containers, mostly around the edges of the garage
- Several mouse droppings observed directly on 3 flour bags at the top of a pallet
- On shelving near the front of the garage lined with cardboard
Corrective Action(s): - Flour bags with rodent droppings were discarded at time of inspection. Remove all pallets from the garage, as well as all dry storage products from the shelving and thoroughly clean and sanitize all rodent droppings with 1 part water, 9 parts bleach solution. Let soak for approximately 15 minutes. Call the professional pest control company and patch up the holes that are present near the front of the garage (right side), as well as in the back-left corner of the garage
- Reset all mechanical traps and ensure that the pest control company arrives at least bi-weekly to monitor the pest infestation. Send all pest control reports to the Environmental Health Officer.

Comments

Routine inspection conducted. Facility is tight on space, storage practices generally need to be improved. The following observations were made:

1. Temperatures
- Front stand-up freezer at -18C
- Prep cooler up front at approximately 4C
- Gulab jamun hot-holder at 60C
- Main kitchen walk-in cooler at 3C
- Auxiliary kitchen walk-in cooler at 2C
- Auxiliary kitchen stand-up freezers at -18C or below
- Temperature logs maintained and up-to-date

2. Hygiene and Sanitizing
- Hand wash station in main kitchen stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizing pail contains approximately 200 ppm chlorine residual (in main kitchen)
- High-temperature dishwasher sanitizes at final rinse temperature of 74C at the plate/tray

3. Storage
- Chemical products stored separately from food products

4. Pest Control
- Professional pest control company conducts monthly audits on interior of facility
- No signs of recent, visible pest activity in both kitchens (however, garage had signs of rodent activity - see violation code 304 above)
- Forward all professional pest control reports to the Environmental Health Officer

5. Administrative
- Head chef has FoodSafe 1 (Refresher taken in September 2018)
- Permit posted
