Observation (CORRECTED DURING INSPECTION): Handwash station had a bar of soap and no liquid hand soap.
Corrective Action(s): Handwash stations must be equipped with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Discontinue the use of bars of soap in the facility. Liquid soap was replaced at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Staff member observed wiping hands with a reusable cloth towel while handling raw poultry.
Corrective Action(s): Staff must adhere to good hand hygiene practices and wipe hands with single use towels to prevent potential cross contamination.

Observation: Baked food items at the front check out were displayed without proper protection from potential customer contamination.
Corrective Action(s): All food items must be displayed in a manner which protects foods from potential contamination. Foods must be covered with plastic wrap, plastic cover, or another means to prevent potential contamination.

Comments

-Both walk-in coolers were at 4C.
-Display cooler was at 4C.
-Customer area cooler was at 2C.
-Front area upright cooler was at 4C.
-Chest freezer was at -24C.
-Cleaning and sanitizing carried out in 2-compartment sink. Sink plug present and bleach available. Bleach prepared at the end of the day, after meat cutting has been completed.
-Bleach sanitizer spray bottle labelled and greater than 200ppm.
-Meat cutting boards sanitized at least every 4 hours. Deep cleaning and sanitizing carried out at the end of the night.
-Meat saw sanitized after each use.
-Bulk foods are either gravity dispensed or have scoops stored in a sanitary manner.
-General sanitation satisfactory at the time of inspection.
-Random selection of canned items were found to be in good condition.
*Clam shells of dried fruit did not have labels indicating the importer or supplier. Operator states the invoices are with the accountant and will obtain invoices to confirm foods are from an approved source.
