Observation (CORRECTED DURING INSPECTION): One insert of cooked pork stored at the preparation cooler was measured with an internal temperature of 8C. This insert was stored closed to the grill side and the top cover was missing due to a broken metal holder.
Corrective Action(s): Aforementioned pork was discarded by staff. Ensure to cover cold food inerts with a cover when facility is not busy.

Observation (CORRECTED DURING INSPECTION): 1. One sanitizing bucket measured with a concentration of less than 50 ppm quats.
2. Glass washer unable to detect any iodine sanitizer. Stock bottle was full.
Corrective Action(s): 1. Discard and refill the sanitizing bucket with 200-400 ppm quats. Ensure sanitizer in buckets are changed at least every 2 hours.
2. Wash and sanitize glasses at the dishwasher. Do not use the glass washer until serviced and tested.
