Observation: Temperature inside walk-in cooler was 8-10 degrees Celsius.
Corrective Action(s): Cold holding units must be 4 degrees Celsius or less. Cook explained that prior to inspection the premise experienced a busy lunch period and they had just received a shipment of produce that was placed in the cooler. At time of inspection the temperature did not appear to cool down very quickly. Operator agreed to have cooler serviced and move all protein products and pre-cooked products to other coolers until the temperature returns to 4 degrees Celsius or less.

Observation: Mouse droppings found in back storage room and some beside the stove.
Corrective Action(s): Clean up all droppings and sanitize the affected areas with bleach and water. Premise is serviced by pest control company on a monthly basis and live traps in use throughout the premise. Reminded operator to clean up droppings as soon as they are discovered.

Observation: Spilled food and ingredients in storage room and cooking area.
Corrective Action(s): Spilled food and ingredients shall be cleaned up immediately to avoid attracting mice.

Observation: Newspaper lining shelves in dry storage areas and the bottoms of coolers.
Corrective Action(s): Do not use newspaper in food storage areas. All newspaper shall be removed from shelving and coolers.

Comments

General observations:
All other coolers were 4 degrees Celsius or less.
Freezers were -18 degrees Celsius or less.
Hot holding units were over 60 degrees Celsius.
Coolers and freezers equipped with thermometers.
Food storage practices are satisfactory.
Organization of storage areas is satisfactory, however organization of back storage room could be improved to assist with rodent control.
Hand sinks are stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
Food handler hygiene is satisfactory.
Chemicals are stored in a safe manner.
Low temperature dishwasher had a residual chlorine sanitizer concentration of 100ppm (as per test strip) following the final rinse cycle.

Comments:
Operator states they are in the process of changing all of the fluorescent lights in the food preparation, storage and dishwashing area to LED lights. The lighting upgrade should be complete within 2 weeks.
Operator is also in the process of finishing the painting of the unfinished drywall (i.e. pass through) and should be complete within 1 week.
The paper towel sheets were recently replaced with paper towel rolls, which do not fit in the existing paper towel dispensers. Operator is in the process of replacing the dispensers with new dispensers that accommodate paper towel rolls or use paper towel holders, and should be complete within 1 week.
