- Manual Dishwashing: 4 Step Method utilized. Sign posted.
- Ensure "ALL" food contact surfaces are being washed and disinfected after use or on a timely manner. (ie: 3-4 hours) All items are to be stored in a sanitary manner. (ie: upside dowwn - upper sshelves.)
- Wiping cloth storage discussed. Limit the quantity of cloths being used. Ensure cloths are being stored,completely submerged, in a sanitizer at all times. Monitor/change solution routinely.
- Food Storage: Food/ingredients are to be kept stored in covered, food grade containers. Organize refrigeration/freezer storage shelves. (ie: smaller items on upper shelving)
- Sanitary Facilities: Ok.
- Chemical Storage: All items are to be stored in designated areas.
