Observation: Handles on many of the kitchen equipment observed with food debris affixed. Ensure handles to all coolers etc are cleaned and sanitized everyday.
Microwave oven observed with food splatter inside
underside of shelving directly above food preparation surfaces required cleaning due to food splatter build up. Underside of shelving to be cleaned daily

Observation: Meat cleaner observed to be rusted. Discard cleaver
Painted wood shelving is chipped in several areas ie. shelving next to the oven. Lower shelving in pizza dough prep area observed damaged in several spots.
Wire rack shelving inside the walk in cooler observed to be flaking/rusting. Replace damaged shelving
Bulb intensity in exhaust canopy needs to be increased
Do not store any perishables inside until cooler is repaired so that it is cold holding at <4C
*Observed that there is no dedicated sink for vegetable washing. Plumbing is available to install a sink next to the hand wash station.This sink would also double as a cooling sink for sauces. Install a prep sink.
Chlorine test strips on site but have expired.
