Routine check. See below for transfat requirements.
Hand washing station has liquid soap and paper towels.
Coolers are at <4 C - good. Verify accuracy of your thermometer in the main cooler. Temperature records chart is available. Check daily.
Hot holding soup is >60 C - good.
Dishwasher has a hot water sanitizing rinse.
Chlorine sanitizer is also used.
Reviewed food storage procedures: First in First out and storage of raw meats and poultry below ready-to-eat foods.
Kitchen staff have Food Safe level 1 - check expiry date. If taken before 2013, then a short refresher course is required by July 2018.
At least one staff per shift requires a valid Food Safe certificate.

Specific comments: Do not use the Duncan Hines cake mix - discarded during inspection as percentage of transfat is >5%.
Keep transfat (nutrition label) information on-site for baked goods where ingredients show margarine, shortening, or hydrogenated oils on the label.
In general:
Oils and soft spreadable margarines must have 2% or less transfat of total fat.
Other items such as cake mixes, baked goods, pastries, etc. must have 5 % or less.
Where the source of the transfat is solely butter or dairy, these sources are exempt from the regulation.
The calculation is #grams of transfat /divided by the #grams of total fat x times 100.
Check ingredient label to see if the source of transfat is partially hydrogenated, hydrogenated oils, margarine, or shortening and if so, do the calculation (unless the nutrition label says 0 transfat)..

  • Pre-packaged food with a Nutrition Facts table sold directly to the consumer without alteration
  • Food with the sole source(s) as naturally occurring trans fat (i.e. beef, sheep, lamb, bison and dairy products)
