Time Spent: 0.25 hour Specific comments: Do not use the Duncan Hines cake mix - discarded during inspection as percentage of transfat is >5%.
Keep transfat (nutrition label) information on-site for baked goods where ingredients show margarine, shortening, or hydrogenated oils on the label.
In general:
Oils and soft spreadable margarines must have 2% or less transfat of total fat.
Other items such as cake mixes, baked goods, pastries, etc. must have 5 % or less.
Where the source of the transfat is solely butter or dairy, these sources are exempt from the regulation.
The calculation is #grams of transfat /divided by the #grams of total fat x times 100.
Check ingredient label to see if the source of transfat is partially hydrogenated, hydrogenated oils, margarine, or shortening and if so, do the calculation (unless the nutrition label says 0 transfat)..

Food exempt from the regulation includes:
- Pre-packaged food with a Nutrition Facts table sold directly to the consumer without alteration
- Food with the sole source(s) as naturally occurring trans fat (i.e. beef, sheep, lamb, bison and dairy products)
- Employee lunches not purchased from the food service establishment
