Observation (CORRECTED DURING INSPECTION): - Surface sanitizer missing at the time of the inspection. Wiping rags were touching raw vegetables.
- Improper 2 compartment sink manual ware washing method. The operator was skipping the sanitizing step.
Corrective Action(s): - Provide surface sanitizer at all times at 100ppm chlorine bleach concentration. Store wiping rags inside the sanitizer while not in use.
- Follow the proper 2 compartment sink manual ware washing method. Ensure to properly sanitize all equipment, utensils, and other food contact surfaces.

Observation (CORRECTED DURING INSPECTION): Missing paper towels in the dispenser at the main handwashing station.
Corrective Action(s): The operator provided paper towels at the main handwashing station. Ensure that all handwashing stations are fully stocked with paper towels and hand soap at all times.

- on sliding doors of the coolers
- around the grill/stove top/ fryer
- on floors throughout the kitchen

Comments

- General sanitation is satisfactory.
- Two compartment sink available for manual warewashing.
- Dry storage area has adequate space and wire racks.
- Downstairs storage unit has coolers/freezers. Foods stored on wire racks, off the floor.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.
- No signs of pest activity. A third party company inspects on a monthly basis.

Temperature control:
- All coolers at < or = 4C
- All freezers at < or = -18C
- Hot holding units between 60-70C
- Immediately begin daily temperature log for all coolers/freezers/hot holding units. This will be verified during the next routine inspection. Template provided.
