- All freezers =-18C
- All hot holding at >-60C and time tracked
- Low temperature dishwasher final rinse measure 50ppm chlorine
- Chlorine sanitizer at dispenser at the three compartment sink measure 100ppm
- Observed staff mixing chlorine sanitizer buckets and checking concentration
- Staff has valid FOODSAFE certificate or equivalent
- No signs of pests, pest report reviewed, no pest activity noted
- Ventilation hood is well maintained
- Ice machine is maintained, scoop stored separately
- Temperature log is well maintained. Corrective actions are listed.
- Delivery observed at time of inspection, supervisor noted that delivery trucks are responsible for temperature tracking/monitoring up to delivery.
- General sanitation is good, no concerns noted.
