- Handwashing station fully equipped with hot and cold running water, liquid soap, paper towels - All coolers =<4C - All freezers =-18C - All hot holding at >-60C and time tracked - Low temperature dishwasher final rinse measure 50ppm chlorine - Chlorine sanitizer at dispenser at the three compartment sink measure 100ppm - Observed staff mixing chlorine sanitizer buckets and checking concentration - Staff has valid FOODSAFE certificate or equivalent - No signs of pests, pest report reviewed, no pest activity noted - Ventilation hood is well maintained - Ice machine is maintained, scoop stored separately - Temperature log is well maintained.
