- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (walk-in) at < or = 4C
- Walk-in freezer at < or = -18C
- Hot holding units were not in use at time of inspection. Ensure they are capable of maintaining food at 60C or greater.
- High temperature dishwasher is available. Final rinse temperature reached 72.8C at the plate level.
- 200 ppm Quat sanitizer is available in spray bottles. Sanitizer is manually prepared as per manufacturer's instructions.
- Food is covered and protected from contamination
- Dry storage area is maintained. Bulk food scoops are stored in a sanitary manner.
- Ice machine is maintained. Ice scoop is stored in a sanitary manner.
- Temperature monitoring system is in place
