302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. No chlorine detected in bleach water sanitizer located in front and back areas.
2. Mildew growth located on ice scoop.
Corrective Action(s): 1. Bleach water sanitizer was remade and tested at 100 ppm chlorine. Ensure that sanitizer is maintained at concentrations required for effective sanitizing of food contact surfaces (e.g. 100 to 200 ppm chlorine). A poster with information on the preparation of sanitizer solutions was provided at the time of inspection.
2. Ice scoop placed into dishwashing area to be washed and sanitized. Ensure that all utensils/food contact surfaces/equipment are maintained in sanitary condition to prevent potential contamination of food.

Observation (CORRECTED DURING INSPECTION): Wiping cloths observed hanging from staff aprons. It was stated that wiping cloths are used for drying hands.
Corrective Action(s): Wiping cloths removed. Ensure that hands are properly washed with warm running water, liquid hand soap, and dried with single use paper towels. Wiping cloths may reintroduce potential contamination to hands.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): The following was observed:
1. Raw shell eggs stored above ready-to-eat foods (feta) in the walk in cooler
2. Two containers were observed to be double stacked in the large preparation cooler upper area
3. Liquid observed pooling on bottom of small preparation cooler. Note: All items in contact with liquid at the time of inspection were packaged/sealed.
Corrective Action(s): 1. Raw shell eggs relocated so that they are not located above any ready to eat foods. Ensure that raw animal foods are not stored above ready to eat foods to prevent potential contamination of ready to eat foods (no final cook step).
2. A lid was placed between the containers. Ensure that if containers are stacked, a food grade barrier is in between to prevent potential contamination of food.
3. Liquid removed. If issue persists, have cooler serviced as necessary to prevent any accumulation of liquid at the bottom of the cooler.

Observation (CORRECTED DURING INSPECTION): Growth of mould/mildew observed in corner of mop sink.
Corrective Action(s): Affected areas were cleaned at time of inspection.

Observation: 1. Walk in freezer is currently not functional as stated by staff. Walk in freezer was off at the time of inspection (ambient temperature) with no food storage.
2. Multiple pots and pans located on dry storage rack in the back area were observed with peeling or scratched non-stick surface. It was stated that these pots/pans are not in use.
Corrective Action(s): 1. Ensure that freezer is capable of maintaining foods at -18 degrees C or less. Date to be corrected by: January 25, 2019.
2. Ensure that above-noted pots and pans are removed from the premises. Date to be corrected by: January 14, 2019.

Routine inspection conducted:

- Coolers at 4 degrees C. Excluded: Coolers used for storage of non-potentially hazardous foods only (e.g. front beverage cooler)
- Freezer at -20 degrees C
- Thermometers available for cold holding units. Probe thermometers available on site for internal temperature checks.
- Hot holding internal temperatures at 60 degrees C or more
- Hot and cold running water, liquid hand soap, and single use paper towels available for hand washing.
- High temperature dishwasher measured 72 degrees C (minimum 71 degrees C) at the utensil surface during the final rinse
- Temperature logs are maintained for cold holding units and dishwasher
- No signs of pest activity observed at time of inspection
- Chemical storage separate from food storage
- FOODSAFE requirements met at time of inspection
