302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
1. Bleach sanitizer in pail with wiping cloth measured at >> 200 ppm chlorine concentration with test strip. Operator diluted the solution during inspection. Thereafter, the sanitizer measured at 200 ppm chlorine concentraion with test strip.

2. Kebab skewers observed stored with food debris on them.
Corrective Action(s):
1. Prepare bleach sanitizer at a concentration of 200 ppm by mixing 1 teaspoon of bleach with 1L of water to adequately sanitize food contact surface. Bleach at a concentration greater than 200 ppm can cause chemical contamination of food contact surfaces and food.

2. Clean and sanitize kebab skewers immediately. Never store equipment which is soiled with food debris. All equipment must be cleaned and sanitized using the low-temperature dishwasher or 3-compartment warewashing method (as per approved sanitation plan) to remove gross debris, bacteria and/or toxin and to prevent contamination of food.

Observation: The following areas are observed with food debris and/or grease build-up:
- Ventilation canopy
- Walls along the ventilation canopy
- Behind the cooking equipment
Operator stated that the ventilation canopy is scheduled for cleaning next week.
Corrective Action(s): Degrease, clean and santiize the aforementioned areas and submit photos to the health inspector via email once completed. Conduct regular deep cleaning to prevent grease and food debris build-up and to maintain the premise in a sanitary manner for safe handling of food.

Observation (CORRECTED DURING INSPECTION): Plastic cutting board observed in many heavy scores and dents.
Corrective Action(s): Discard cutting board and replace with a new cutting board. Cutting boards which are heavily dented/scored are no longer in good condition to be sanitized between uses and can cause physical, biological or chemical contamination of food. Do not use any equipment which is broken or not in good working order.
